Light Oat Bread


Breakfast is the most important meal of the day. Never skip your breakfast as it keeps you energized throughout your day. This morning, we had a couple slices of oat bread, spreaded with butter, strawberry and coconut jam.

For the dough
1/4 warm water
1 tsp active dry yeast
2 tbsp brown sugar
3 cups flour
1 tsp salt
1/2 cups oats
1/4 cups raisins
1 tbsp margarine
1 egg
1/2 cups water (add accordingly)

Method
1. Dissolve yeast, sugar into 1/4 warm water and proof for 3 minutes
2. Mix all the dried ingredients, add in the dissolved yeast mixture, together with the egg and margarine, then knead.
3. Let rise in oiled bowl until doubled in size, about an hour
4. Punch down and form into loaves and let rise about 30 minutes in the loaf pans
5. Bake for 20 minutes at 200c.

Flatbread


Saya tanya my mil, apa nama roti ni, dia cakap flatbread. Bahan dan rupa macam roti prata (kat Malaysia ni orang panggil roti canai la, sarapan yang paling famous tiap2 pagi). Bila saya google nengok roti capati. Mungkin dah di improvise kot, sampai kami boh kucai dalam tu. Roti ni tak pakai minyak, pakai marjerin je. Senang dan ringkas, tak yah tebar. Makan dengan kuah dalca. Yum,yum sekali makan nak dua keping, rasa nak tambah lagi,haii cukup-cukup la..Sahur pagi-pagi pun selere aje.

Tausa Bun

Tausa bun commonly known as red bean bun. I always prefer kaya or tausa filling. I manage to learn how to do homemade seri kaya and today I learn how to make my own red bean paste. It takes sometime to make it very thick and sticky, but with 300g of red bean you can get quite a lot of the filling. The remaining paste you can always pack it nicely and keep for like one to two weeks in the fridge. I prefer the homemade tausa as it is not too sweet like those in the bakery.

Red bean paste filling
300g red bean (soak for few hours)
10 cups water (add more if necessary)
175g sugar (i put less sugar)
2 pandan leave (optional)
100g butter
A pinch of salt

Method
1. Boil red bean in water with pandan leaves until soft.
2. Cool and grind to paste. Heat pan or wok with 100g butter and add the red bean.
3. Add sugar, pinch of salt and stir under slow heat until very thick. Let it cool


For the dough:
3 cups flour
1 tbsp of milk powder
1 tbsp instant yeast
1/2 cups of water (add accordingly)
1 tbsp sugar
1/4 tsp salt
2 tbsp sunflower oil

Method
Mix the dough ingredient together and knead to a soft non sticky dough, leave rise for 1 hour. Then punch down and roll into smaller balls and add filling and seal, the following steps, refer pictures below...
Glaze with egg yolk. Place on greased paper. Leave rise again then it's ready to bake.

Bake for 15-20 minutes at 220 degree

Cinnamon rolls

Cinnamon rolls untuk breakfast. Lama da tak buat, masa mula-mula pandai buat dulu, balik-balik buat cinnamon roll ni je sampai jemu.

Bahan-bahan
untuk base roti saya gunakan resipi basic sweet dough.Bahan lain yang diperlukan serbuk kayu manis, mentega, gula perang, sedikit garam dan kismis. Selepas adunan doh mengembang, uli doh membentuk segiempat leper. Sapukan mentega dipermukaan atas doh. Kemudian taburkan rata bahan-bahan di atas. Gulung doh macam buat swiss roll tu, dan potong/bahagi kepada beberapa bahagian. Biar 30 minit sehingga kembang. Kemuadian bakar pada suhu 200°C selama 15-20 minit

Roti canai

Siapa tak kenal roti canai, sarapan yang sangat famous kat Malaysia ni. Kalau di Singapore lebih dikenali dengan roti prata. Lawannya dengan kari dal, tak pun kari, wahhh, kena pulak ngan teh tarik,ummpp..Perghh makan tak ingat sampai berkeping-keping. Hari tu buat dalca sebab nak makan ngan roti canai ni la. Baru sempat nak upload, cuti tahun baru banyak aktiviti, online pun kejap-kejap je. Siapa yang berhajat nak cuba buat roti canai sendiri bolehlah tengok teknik membuatnya kat blog MF. Saya pun rujuk resipi asal dari sini. Tq banyak-banyak MF




Bahan-bahan yang saya gunakan:

4 cawan tepung
1 cawan air
1 biji telur
1 sudu kecil garam

3 sudu besar susu pekat

1 sudu besar margerin

sedikit minyak masak (supaya doh tidah melekat antara satu sama lain)

Donut oh donut




















Nak buat donut ni saya gunakan resipi buat roti. Bezanya dalam resipi ni kita gantikan air tu dengan susu segar supaya tekstur dia lagi gebu. Yang lain tu saya ikut je step by step dan last skali cetak bentuk donut. Lepas mengembang setengah jam, bolehlah goreng. Kalau buat banyak boleh frozenkan, susun selapis-selapis, lapik dengan plastik. Bila nak goreng biarkan pada suhu bilik seketika. Salut dengan gula castor atau bleh makan ngan jem, kaya atau chocolate sauce. err yums....

Bread pudding


Bread pudding specially for hubby

Bahan-bahan
8 keping roti, potong kiub
½ cawan kismis
1 sudu teh serbuk kayu manis
4 biji telur
4 sudu besar gula perang
1 sudu teh esen vanilla
½ sudu teh garam
1½ cawan susu
½ air bancuhan 1 sudu tepung jagung
1 sudu besar marjerin dicairkan

Cara penyediaan
1. Panaskan oven pada suhu 180’C.
2. Dalam loyang pembakar masukkan kiub roti dan kismis, ratakan
3. Pukul telur , masukkan gula perang, garam, susu, bancuhan tepung jagung, esen vanilla dan serbuk kayu manis.
4. Kemudian, tuang campuran telur tadi ke dalam loyang yang sudah di letakkan kiub roti tadi.
5. Tabur sedikit lagi serbuk kayu manis dan margerin cair di permukaan atas pudding.
6. Bakar selama 30 minit.

Oat bread

Hari-hari fikir nak buat breakfast apa pagi-pagi. Buat roti je la, malam dah kena uli, kalau esok tak sempat. Saya buat basic roti, dan campurkan sedikit oat dalam adunan. Pagi-pagi buat burger dan bubuh coleslaw. Kalau ada cheese lagi menyelerakan. Ok la ni, kenyang pun.

Rumah saya ni, sarapan yang paling kerap skali ialah roti. Nak buat supaya tak jemu, kenalah pikir macamana cara nak mempelbagaikannya. Sejak berumahtangga, makin giat saya belaja buat roti, nasib mak mertua turunkan ilmu, sekarang ni kira dah pas la kot. Biasa menu sarapan pagi di selang seli dengan roti canai, jemput-jemput dan kuih-muih. Kuih saya tak pandai buat lagi. Sikit-sikit je la kena ikut resepi. Lain macam dulu-dulu, masa single. Bila sarap je nak nasi goreng cili padi, mihun/mee goreng, nasi lemak bla..bla..Roti memang ada tapi bli kat kedai. Kadang tu ada la buat jugak goreng-goreng ni, tapi husband makan sikit je, dia kata too heavy amik nasi/mee waktu pagi.


Lebihan roti oat ni, esoknya saya buat garlic bread cecah dengan homemade mushroom sup. Satu talam ni hubby sorang bleh habiskan, punya la favorite dia, tapi kami makan berdua la, he he. Pagi tadinya breakfast saya buat kuih keria. Saya buh next entry k..

Pau Kaya - (roti kukus)


Resepi membuat pau yang ringkas.

Bahan-bahan
1/3 instant yis mauripan, paket 11g
3/4 sudu besa gula
*larutkan dalam 1/2 cawan air suam, biarkan kembang selama 2-3 minit,
kemudian masukkan ke dalam:

campuran:
2 cawan tepung
1/2 sudu teh garam
1 sudu besar susu susu tepung

tambah:
1/2 cawan air/secukupnya
uli sehingga membentuk doh, kemudian letakkan
1 sudu minyak jagung/makan

Langkah-langkah
1. Biarkan doh naik selama 1jam. Kemudian uli sekali lagi.
2. Masukkan inti mengikut citarasa (kaya/kacang merah/daging/ayam) dan bentukkan menjadi doh bulat
sebesar tapak tangan.
3. Lapik pau dengan daun pisang atau kertas minyak.
4. Biarkan sekali lagi doh naik selama 45minit.
5. Pau sedia untuk dikukus selama 15minit pada suhu tinggi .

Petua mendapat pau yang cantik.
1. Panaskan sedia periuk kukus.
2. Jarakkan sedikit susunan antara pau, untuk pengudaraan yang baik semasa mengukus
3. Jangan kecil/besarkan api gas selama 15minit pau dimasak.
4. Jangan buka tudung periuk sehingga pau masak.
5. Hati-hati semasa membuka tutup periuk, supaya air tidak menitis di atas pau.
6. Sebaik-baiknya setelah matikan api gas, tunggu selama 5minit baru buka periuk kukus.
7. Adalah lebih baik jika tudung periuk dibalut dengan kain. (tapi saya kukus macam biasa je tak pakai kain)

Bagel burger for breakfast



















my first time try making this bagel. It turns out good..lucky me! The dough quite similar with making bread, it's just that the technique of baking the bagel is a bit different. After the dough had double up it size, put it in the boiling water (mixed with honey/sugar). Flipped it the other side
for like 30 seconds. Place the bagel in a baking pan, now it's ready to bake.Prepare the homemade burger, made from mince meats seasoned with pepper, salt and a bit of sugar. Mixed with chopped onions, bread crumb,fresh thyme herb & egg yolk..Fry with medium heat..hmm i like it!

Homemade pizza!











Ingredients:

Pizza base - refer to sweet bun dough recipe
Tomato spread - can opt to use tomato puree or spaghetti sauce instead


For the topping

pepperoni
mozzarella cheese
tomato
mushroom
onion
capsicum/ bell peppers


Bake pizza until the crust is browned and the cheese is golden, about 10-15 minutes at 200c .

Basic sweet dough

Ingredients:
3 cups flour
7g instant yeast
2 tbsp milk powder
1 tsp bread softener
1 egg
1 tsp salt
1/4 corn oil
3/4 cups of warm water

Method:
1. Add sugar, yeast and 1/4 cup warm water (remaining water add to flour later), Let it be for 3minutes.
2. Mix flour, milk powder, bread softener, and salt.
3. Add the egg and the yeast mixture into the flour, add the remaining water accordingly and knead until it form a dough.
4. Spread the oil all over the dough and keep kneading until the dough surface become smooth.
5. Keep aside cover with damp cloth for 1 hour until double it size.
6. After 1 hour punch the dough and knead according to any shape that you wish.
7. Wait about 15 minutes, glaze with egg yolk on the surface and it's ready to bake.

Bake for 15-20 minutes at 220 degree

Focaccia





Ingredients:

1/2 tbsp dry active yeast
1/2 tbsp sugar
150 ml warm water
25 ml corn oil
1 tsp salt
240 g bread flour

1 tsp bread softener **



Method

1. Mix yeast, warm water and sugar and set aside until foamy for 5minutes. Add in the oil and salt and 1/2 of the flour into the mixer then gradually add in the remaining flour until a soft dough is formed.

2. Continue mixing until dough is elastic and smooth. Smear oil all over the surface and let rise until it double the size for about 1 hour.
3. Punch down the dough and using the tips of your finger, make some indents on the dough and sprinkle the top of your dough with the topping of your choice; it can be herbs, cheese, chicken, meat, even fruits.

I topped mine with rosemary herbs, garlic, onion, salt and tomatoes.
4. Bake in a preheated oven of 180° for 15 minutes. Let the bread cool off a little bit before cutting into smaller pieces.
